Ingredients:
• 1 cup shredded chicken
• 1/2 cup cottage cheese (I use lactose free)
• 2 tbsp diced onion
• 2 tbsp diced celery
• Hot sauce or your favorite buffalo sauce (to taste)
• Your choice of seasonings (to taste)
• 3 tbsp cheese (I use vegan shredded cheese)
Instructions:
1. In a small bowl, combine shredded chicken, cottage cheese, diced onion, and celery.
2. Season with your preferred seasonings and add your desired amount of hot sauce or buffalo sauce.
3. Sprinkle vegan shredded cheese on top.
4. Heat in the microwave for 2 minutes or until warmed through.
5. Stir well to mix all ingredients and enjoy!
This recipe is perfect for a single bowl/meal, but you can easily scale it up! Make a bigger batch, divide it into meal prep containers, and enjoy a quick and healthy option all week long.
