Healthy Avocado Egg Salad 🤤🤌🏼🥑🥚
I eye my cooking to taste/liking because I cook best that way, but here’s the breakdown of the ingredients.
This is a quick and easy meal to prep! Especially for my busy mamas!
Add all of this into a large bowl:
-2 Avocados
-Diced Hard Boiled Eggs (amount varies on how much salad you want to make, but do more egg over yoke/not too much yoke)
-Diced Celery
-Diced Onion
-Diced Tomato
-Heaping Spoon of Avocado/Dairy Free Mayo
-Drizzle to taste Honey Mustard OR Dijon Mustard
-Himalayan Salt, Pepper, Onion Powder, & don’t forget that Dill 🙌🏼
Mix and get your healthy eats on! This is LOADED in protein and healthy fats! It’s a great meal prep meal for the week too! Add it to lettuce, wraps, rice cakes, whatever your fancy! 🤗
